Essence of a Hong Kong sunset04/27/2023 ByAndy Honestly, this feels more like an experience than a beverage. I was last in Hong Kong in the '00s to visit some family, and we even went to Ocean Park. Don’t remember much of that day, but what I do remember after all these years is taking the outdoor escalator all the way up right around closing time. Standing at the summit, the way the sun hit the gentle mountains sloping down into the sea and how the warm air caressed you even at that height, well, that’s the closest that I can describe the familiarly joyful Cha Qi of this tea for me, especially in its remaining resteeps. The liquor is a beautiful amber color with a tiny hint of chartreuse in the early infusions. As soon as you rinse the leaves you get the oolong fragrance that reminds you that even if people are fallible, tea is perfect, and your ancestors and not really that far away, and the Universe is, in fact, a miracle.
The flavor is floral with a delicious buttered toast outline and a delicately sweet plummyness that edges forward with successive brewings.
