Dark tea (hei cha, 黑茶) is a broad category of teas that undergo microbial fermentation after their initial processing. Produced in several regions of China using different traditional methods, dark teas can develop rich, earthy, woody, herbal, and sometimes sweet or fruity characteristics, often becoming smoother and more complex with age.
